Ingredients to make Fish fillets with cava sauce:
- 8 turbot fillets
- 1 spring onion
- 1 glass of fish brother
- the white of 4 leeks
- 2 garlic
- 1 glass of cava
- 1 lemon

How to make Fish fillets with cava sauce:
- Chop the spring onion very finely, cut the white of the leeks into slices and fry them all in a pan with oil.
- When it’s a little golden, add the cava and let it reduce a little.
- Then add the fish broth and let it reduce over low heat for 20 minutes.
- Then pass it through a potato mill.
- Season the fish fillets, flour them and fry them in a pan with oil and 2 unpeeled garlic cloves.
- Serve the sauce at the bottom of a bowl and the turbot fillets on top.
- Garnish with a lemon and chopped parsley.
