Ingredients to make Emperor with onions:

  • 1 kilo of emperor, in fine fillets.
  • 2 large onions.
  • 1 plate of flour.
  • 1 glass of water.
  • 1 glass of white wine.
  • 2 deciliters of olive oil.
  • I jumped.

How to make Emperor with onions:

  1. Wash the fillets well and salt.
  2. Flour both sides and fry in a pan with hot oil.
  3. Once the fillets are browned, set aside and reserve.
  4. Cut the onion into julienne strips (thin strips).
  5. In the same pan where we have fried the fish, we remove most of the oil and fry the onions until they become transparent.
  6. Then we add the glass of wine and the glass of water and let it cook until the onion is soft and the cooking liquid evaporates.
  7. Place the fried emperor fillets in a low casserole and distribute the cooked onion on top.
  8. We bring the fish to a boil and serve immediately since if it is overcooked, the fish can dry out.
  9. We serve hot in a fountain.
