- 4 pieces of salted cod
- 3 tablespoons of flour
- 250 grams of crushed tomato
- 200 grams of fried tomato
- 1 onion
- 3 green bell peppers
- 1 pinch of salt
- 1 glass of olive oil
- 1 pinch of pepper
How to make Cod with tomato and peppers:
- The ideal is to buy the desalted cod, however, if we want to desalt the cod ourselves, we will have to leave it to soak for 24-48 hours, changing the water 2-3 times. Afterwards, we dry the fish, put the flour on a plate and pass each piece of cod through it to coat it.
- We put a frying pan with a glass of oil and, when it is hot, fry the cod over high heat, leaving it for two minutes on each side. Remove and reserve the pieces to later make the cod with tomato and onion.
- Chop the onion and peppers. Heat a large casserole or frying pan, add a little oil and sauté the onion and peppers for approximately 10 minutes. After this time, we added the two types of tomato, a little salt and pepper. We let it cook. We have opted for green peppers, however, you can also make the cod with tomato and piquillo peppers or red peppers. Likewise, instead of crushed tomato, you can use well-chopped natural tomatoes.

If we prefer to prepare a healthier dish, we can always choose to cook the cod with tomato in the oven. To do this, we will have to follow these steps:
- Prepare the vegetables and place them on a baking sheet.
- Instead of fried tomato, we recommend using chopped or chopped natural tomato to taste, and also add it to the tray.
- Place the cod pieces on top, add a drizzle of olive oil, salt and spices to taste.
