Samfaina is a vegetable preparation from Catalonia that is very similar to ratatouille. This time we combine it with cod prepared in the oven, for a balanced and juicy main course. Learn to cook this Catalan recipe with these simple steps that we present to you.
Ingredients to make Cod with samfaina:
- 250 grams of Cod
- 1 unit of Eggplant
- 1 unit of red pepper
- 1 zucchini unit
- 2 units of onion
- 2 units of green pepper
- 2 units of tomato
- 1 jet of Oil
- 1 pinch of salt
- 1 pinch of black pepper
- 1 bay leaf
How to make Code with samfaina:
- Market ingredients to prepare the samfaina, with a combination of vegetables that provide a balanced flavor to this Catalan dish, and which are completed with cod. We buy this white fish already desalted and in loins.
- We start by preparing the samfaina. Wash and cut the onion and green and red peppers and pour everything into a saucepan with hot oil. We let it poach for about five minutes, until the onion is golden and the peppers are soft.
- Then add the zucchini and eggplant, cut into cubes. We stir from time to time while the whole thing cooks for a few more minutes, over medium heat.
- Finally we will pour the tomatoes, cut once more into cubes, together with the bay leaf. It is also time to splash. We leave the samfaina for another five to ten minutes over medium heat.
- While the Catalan samfaina is just cooking, we prepare the cod to put it in the oven, which we will have previously heated to 200ºC. We spread the loins on a tray lined with baking paper, water them with a little oil and put the tray in the oven for ten minutes.
- Now we can plate the cod with samfaina. Spread a bed of vegetables on the plate and place the cod loin on top. Accompany it with a fresh rosé wine and consume it instantly.
