- 1 tablespoon sweet paprika
- 4 tablespoons olive oil
- 1 pinch of salt
How to make Cod with Cauliflower:
- Soak the cod in a tray covered with water for 24-48 hours, changing the water every 8 hours. If you buy the cod soaked at its point, you do not need to do this step. If the cod has bones, remove the most visible ones. Prepare the rest of the ingredients.
- Separate the cauliflower into florets and wash it. Peel the potatoes and cut them into pieces.
- Put the potatoes and cauliflower in a wide saucepan, add water to cover these ingredients completely and add a little salt. Heat the casserole over medium heat and cook the cauliflower with potatoes until it is all tender, for about 10-12 minutes.
- When the cauliflower is almost there, add the cod pieces and let the preparation cook for 4-5 minutes.
- While the cod with cauliflower is cooking, prepare the refried sauce that will add flavor to this dish. To do this, peel and cut the garlic into slices and leave the paprika ready in a container.
- Remove a little water from cooking the cauliflower and cod and reserve it. Heat the olive oil in a frying pan and lightly brown the garlic making sure they don’t burn. When they start to turn golden, remove the pan from the heat and add the sweet paprika, stir and pour in a little of the cooking water that you had reserved; let cook a few minutes.
- Trick: Remember that you can add a little hot paprika.
- When the cod with cauliflower and potatoes is ready, add the refried sauce above and let it all cook together for a few minutes, moving the pan all the time. At this point the casserole will have little water.
- Once all the flavors have been integrated, you can serve your dish. As you can see, making Galician-style cod with cauliflower is simple and the result is spectacular. In a few minutes you will have a very tasty, complete and nutritious stew ready.
