How to make Frozen Cod with Chickpeas and Spinach:
- We prepare all the ingredients to prepare our autumn stew. Peel the garlic, the onions, and the tomato and chop all the vegetables into small pieces.
- We heat oil in a saucepan deep enough to make our stew.
- Then add the onion, garlic and bay leaf to make a sauce. Sauté everything together for a couple of minutes.
- When the onion begins to look transparent, add the chopped or grated tomato, as you prefer.
- Season our sauce by adding the spices all together, the sweet paprika, the cloves and a pinch of salt. We continue to redo everything well.
- When the sauce is ready, it will be time to add the cod. Then continue cooking for 5 minutes over medium-high heat.
- Then add the spinach and mix well with the rest of the ingredients.
- We have decided to use frozen spinach, but if you want to make this chickpea stew with cod using fresh vegetables, you must put them in boiling water first.
- When the frozen spinach dissolves, as seen in the photo, add the cooked chickpeas. Like the spinach, if you want to make the chickpeas yourself, you can follow any chickpea recipe, like the one for chickpeas with vegetables, to check the cooking procedure.
- Next, add a little water to make the stew more broth and continue cooking for about 5 more minutes until you verify that the fish is done and the texture of the stew is to your liking.
- Correct the seasoning if necessary and enjoy this rich dish of frozen cod with chickpeas and spinach during Easter and Holy Week. Good appetite!
