Ingredients to make porrusalda cod:

  • 4 pieces of code
  • 3 potatoes,
  • 2 reads
  • 1 onion
  • 1 liter of fish brother or water
  • 100 milliliters of white wine
  • 1 splash of olive oil
  • 1 pinch of salt

How to make cod porrusalda:

  1. Clean the leeks and cut it into pieces, chop the onion. Peel and cut the potatoes.
  2. If you don’t have fish broth, you can heat the water with the bones and the cod skin.
  3. Put a casserole with oil, add the leek and onion. Let brown.
  4. Cut the potatoes and sauté them with the vegetables for a couple of minutes.
  5. Add the glass of white wine. Let reduce for a couple of minutes.
  6. Add the fish broth. Let everything cook until the potatoes are tender. Add a little salt and taste. Rectify if necessary.
  7. Cut the cod into pieces or strips.
  8. When the potatoes are ready, add the cod pieces, leave for a couple of minutes and turn off. Go moving the casserole when you put the cod so that the sauce is made more. Serve and enjoy your homemade cod porrusalda!

The cod porrusalda, like all traditional porrusalda, is simply a leek broth to which cod is added. From the Basque Country, Porrusalda has spread too many other regions of Spain, and it can be prepared in many ways: with chorizo, with chicken, with salmon, or with vegetables.

In the case of the cod porrusalda, you can add other ingredients such as pumpkin and carrots to give it more flavor and texture. But if it happens that you don’t have cod with you at the moment, you can replace it with fish such as hake, or make a porrusalda without cod.
