Cod tortillas are one of those special Easter and Lent dishes that we could eat throughout the year without a problem. They are easy and quick to make, so they can always solve any dinner, breakfast or unexpected visit for us.

This time, we have prepared a recipe for cod omelets with the minimum of ingredients necessary so that you can make the recipe at home without overcomplicating it. In addition, they will be a little lighter because we will bake them, instead of frying them, and we will not use flour. Of course, if you want to add more ingredients, you can always do so.

If you have a cod there and you don’t know what to do with it, then let yourself be enchanted by this traditional delicacy from southern Spain and join us step by step in explaining how to make cod tortillas.

Ingredients to make cod pancakes:

  • 150 grams of cod
  • 2 eggs
  • 1 onion
  • 1 pinch of pepper

How to make cod pancakes:

  1. Do you have the ingredients for the cod tortillas ready? Perfect! The first thing you will do is salt the cod. Let it rest in water and change it about three times. In this case, since there is little cod, half an hour will be enough to desalt it.
  2. While the cod is salting, chop the onion into very fine pieces. Here you can add other ingredients that you want, such as paprika, garlic, parsley leaves or saffron threads. If you want to use flour, about 100 grams will be enough.
  3. Tip: Preheat the oven to 180 ºC so that you finish faster and the cod pancakes cook evenly.
  4. On the other hand, beat the eggs in a bowl. Adding salt will not be necessary as the cod will be salty on its own.
  5. Later, you can cut the cod finely or shred it.
  6. Hint: If you want to make sure it wasn’t too salty, you can try it.
  7. Mix all the ingredients with the eggs and scramble them well.
  8. Now, pour the mixture of the cod tortillas into a tray of cupcake molds. A silicone tray like the one you can see in the photo will work perfectly. Place the tray in the preheated oven at 180 ºC for about 15 minutes or until you see that they are golden brown and that they have increased in size.
  9. Trick: If you want them to be more fluffier, add a little bit of baking powder.
  10. Once they are ready, you can serve the cod omelets to enjoy them with a pinch of pepper and cherry tomatoes. It is the ideal presentation for a perfect breakfast or dinner!

Cod pancakes with Thermo mix

To enjoy the cod tortillas as they are enjoyed in Andalusia, you can also use the Thermo mix. It will be easier to achieve a consistent pancake mix. Here we explain how you should configure it to get the best tapas.

In the event that you add parsley and garlic, place them first in the Thermo mix. Program it on speed 7 for 4 seconds. Next, add the onion and mix on speed 5 for 4 more seconds.

Now, add the salted cod and mix it with the other ingredients for 4 seconds, at speed 4. Reserve the mixture.

Now, you can add the eggs without having to wash the container. This is the time to add any other ingredients you want to use, such as flour or baking powder. Program for 15 seconds at speed 4. Now pour the mixture with the cod and leave it for 5 more seconds at the same speed. Clever! Enjoy these delights of Andalusia cuisine.
