Soy recipe with vegetables

Ingredients to make soy with vegetables:

  • a cup of textured soy, small grain (250 grs)
  • 3 carrots (1/4 k)
  • 2 long pumpkins (1/4 do)
  • 1/2 teaspoon rock or grain salt
  • 1/2 medium onion
  • 2 Serrano peppers (green pepper)
  • 1 teaspoon of margarine
  • 1 pinch of oregano

 

How to make soy with vegetables:

1.Previously leave the soybean soaking, between 20 min to an hour depending on the size of the grain. Drain 10 minutes before cooking in a blender or food processor (to give exact fine cuts) chops the vegetables little by little. Heat the butter in a saucepan until it melts completely; pour in the chopped vegetables and start stirring. Part of the vegetables will fry with the butter and part will be cooked with the same steam as the vegetables, stir constantly to prevent the vegetables from drying out and burning. Previously drained soybeans and stir. Add the salt and oregano and stir for 5 minutes or until the soybeans absorb the vegetable juices.

2.Remove from heat and let stand 5 minutes. Ready to be served, you can add a teaspoon of sour cream to each serving, according to taste; it increases the flavor of the carrots.
