Bulgur Meatballs Recipe

To eat some homemade meatballs, they do not need to be meat or fish. The bulgur meatballs that we show you in Free Recipes are a perfect appetizer for any occasion and easy to make.

Bulgur is a cereal made from wheat that is used to prepare many dishes and is widely used in countries in Africa and the Middle East. This cereal is low in fat, offers easy digestion and provides a large amount of carbohydrates.

To prepare these vegetarian meatballs you can take advantage of ingredients that you have at home and if you want you can substitute the spices and herbs for others such as curry or coriander. We hope you like these vegetable meatballs!

Ingredients to make Bulgur Meatballs:

  • 100 grams of Bulgur
  • 4 dried apricots
  • 1 handful of fresh parsley
  • 1½ tablespoons pumpkin seeds
  • 1 dessert spoon of Turmeric
  • ½ dessert spoon of ground cumin
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 egg
  • 1 jet of olive oil
  • 1 tablespoon chopped onion

How to make Bulgur Dumplings:

  1. We gather all the ingredients to make the bulgur meatballs.
  2. To start with these homemade meatballs, we cook the bulgur in plenty of water with a little salt. Once cooked, run through cold water, drain and reserve.
  3. Tip: The cooking time depends on the manufacturer’s instructions.
  4. Mix the bulgur with the chopped spring onion and chopped fresh parsley, and stir well.
  5. Add the chopped dried apricots, pumpkin seeds and spices (cumin and turmeric).
  6. Season with salt and pepper and add 1 previously beaten egg.
  7.  We mix everything very well.
  8. We form the vegetarian meatballs with our hands or with the help of 2 spoons, squeezing well so that they do not fall apart. Put the meatballs in the fridge for about 20-30 minutes.
  9. Brown the meatballs in a pan with a little olive oil. Let’s turn each one so that they take color on all sides.
  10. Place the vegetable meatballs on a baking tray lined with non-stick paper and bake at 180ºC for 10-12 minutes.
  11. These bulgur meatballs go very well with a Greek tzatziki sauce for example.
