Ingredients to make black rice with prawns and eels:
- 1 package of eels
- 250 grams of prawns
- 2 glasses of rice
- sepia ink
- 1 green bell pepper
- 1 red bell pepper
- 2 onions
- 1 clove garlic
- 1 pinch of paprika (choice of sweet or hot)
- 1 piece of leek
- 1 pinch of salt
- 1 pinch of black pepper
How to make black rice with prawns and eels:
- On the one hand, we prepare a stock with the heads of the prawns, the leek and an onion, skimming when necessary for 25-30 minutes.
- At the end, we pass through the blender and strain it.
- Meanwhile, in a pan brown the chopped onion, when it takes on some color add the garlic, the chopped red and green pepper and let it cool before adding the rice.
- Pearlite the rice and add the cuttlefish ink, after 2-3 minutes add the stock and let the black rice cook (2 glasses of stock for each glass of rice) for 15-20 minutes, depending on the type of rice.
- If we have a hand left over while we make the rice, we can prepare the prawns and eels with a little garlic and oil, later adding a cayenne or paprika to give it a very characteristic spicy aftertaste.
- Once the rice is ready, remove from heat and cover for 3-5 minutes to finish cooking.
