This recipe for cod gratin with potatoes arose from an unforeseen event. My idea was to make the Portuguese recipe for cod in cream, but when I had to prepare the béchamel with the cream I realized that I didn’t have it at home, so I improvised and ended up gratinating the cod with a little cheese and, although it’s not the traditional recipe, it is also very tasty! Ingredients to make cod gratin with potatoes:
- 700 grams of Cod
- 2 medium onions
- 4 medium potatoes
- 1 splash of extra virgin olive oil
- 1 pinch of ground black pepper
- 100 grams of grated cheese
How to make cod gratin with potatoes:
- To prepare this recipe we will desalt the cod at least 48 hours in advance. To do this, put plenty of water in a large bowl and place the cod with the skin facing up (if the skin is facing down it will not desalt well). We try to change the water at least every twelve hours.
- Tip: If you use fresh, frozen or salted cod, you do not have to follow this step.
- To start with the recipe for cod gratin with potatoes, we put water in a saucepan and put it on the fire. When it is boiling, remove it from the heat, add the pieces of fish, cover and take them out after exactly five minutes. Then, we drain and while they are hot we can easily remove the skin, the bones and also crumble or flake the cod fillets. We booked.
- Peel and finely chop the onion. In a frying pan, we put a drizzle of olive oil and, when it is hot, we add the onion and poach it. When it is almost done, we add the cod flakes together with a little pepper, and if necessary, add salt. Remove from heat and reserve. We sautéed very little so that the cod is not dry.
- On the other hand, we peel the potatoes and with the help of a mandolin we make straw potatoes (in very thin strips). If you don’t have a mandolin, it can also be done by hand by cutting very thin slices and making them into strips. Once cut, we fry them in the fryer or in a frying pan with a good splash of olive oil, until they are crispy. We take them out; let them drain on a tray covered with kitchen paper to absorb excess oil and reserve.
- To continue with the preparation of the cod au gratin with potatoes, place the fish with the onion on the base in a dish suitable for the oven and, on top, the straw potatoes. Sprinkle with grated cheese and place in a preheated oven at 180ºC for about 15-20 minutes, or until the cheese is melted.
- We can serve the cod with baked potatoes immediately and enjoy a delicious fish dish.
