Ingredients to make Amaranth Wafers:
- 60 grams of amaranth flour
- ½ cup of water (120 milliliters)
- 1 teaspoon vegetable oil
- 1 teaspoon vanilla essence or flavoring (optional)

How to make Amaranth Wafers:
- To start the amaranth wafer recipe, get the amaranth flour ready.
- If you do not get it, you can place the amaranth in a food processor until it is pulverized, although it is recommended that, once processed, you pass the obtained flour through a sieve to make it even finer.
- In a bowl, mix the water with the vanilla extract or a flavoring of your choice, in case you want to add that extra flavor or sweetness; if you want to sweeten the recipe try with stevia.
- Tip: in some places they sell amaranth sweetened with honey, you can use this if you prefer.
- Add the amaranth flour little by little and mix with a fork or balloon whisk until the ingredients are completely integrated.
- Once the mixture is ready, add a teaspoon of oil and mix again. Optionally you can add a few drops of food coloring of your favorite color.

- Prepare the tortilla press so that it is placed on the grill or stove with a medium temperature.
- Alongside, cut two circles of baking paper the size of the press. When the press has heated up, lay down one of the paper circles and grease it with oil.
- Then, immediately place a tablespoon of the amaranth flour mixture, put the other circle of paper on top (also greased), close the press carefully without pressing too hard and let it cook for a minute and a half.
- The temperature must be constant and must not exceed the average so that the amaranth wafers do not burn.
- After the time, open the press with the help of a thermal glove, remove the paper and the cooked wafer.
- Repeat the process until you finish with your mixture, yes, every time you repeat, remember to grease the paper.
- If you don’t have a tortilla press, you can make amaranth wafers in a pan using the same paper trick.
- To avoid burning yourself, we recommend oiling the paper outside the pan, place the dough, the second circle of paper on top and press with the base of a glass, for example, to spread the mixture.
- Once spread out, carefully place the paper with the dough inside in the hot pan.
- Tip: if you prefer, you can skip the baking paper and directly grease the press, although using the paper will be more practical when it comes to removing the wafers.
- To better shape your amaranth wafers, cut them with the help of a cookie cutter or something circular that helps you mark the circle and cut with kitchen scissors.
