- 1 can of cooked chickpeas
- 1 medium onion
- 1 pot of sliced mushrooms
- 300 gr of fresh spinach (small size)
- 1 chicken breast
- 1/2 liter of chicken or vegetable broth (if you don’t have it, add half a tablet of concentrated broth and water)
- Salt
- Soy sauce
- Olive oil
How to make Chickpeas with Spinach Chicken and Mushrooms:
1 Chickpeas are a simple and delicious legume. The other day for lunch, Julio made some chickpeas with spinach freshly picked from the chicken garden and some laminated mushrooms. Tasty. Here’s the recipe for 4 people: Put the chickpeas in a colander, wash and drain. Strain the mushrooms and drain well Chop the onion. Salt and cut the chicken into small pieces
2 Heat a couple of tablespoons of oil and add the chopped onion, salt and let it brown. When the onion is poached, add the mushrooms and the cut chicken, mix, stir and let them brown well. Add the chickpeas, mix with the onion and mushrooms and add the broth (if you don’t have broth, add water and the half tablet of concentrated broth.) and a splash of soy. Bring to a boil, when you see it boiling, lower the heat to a minimum and let it cook for about 10 minutes.
3 Add the spinach and cook for 5 more minutes. Taste, adjust salt if necessary.
