The charales in green sauce is a meal that is customary in the period of Lent, but it is also prepared at any time of the year. It is an economical and very nutritious recipe, not less tasty for that. we will explain how to prepare the authentic Mexican charales in green sauce.
Ingredients to make Charales in green sauce:
- 250 grams of Charales
- 250 grams of green tomatoes
- 2 pieces of potatoes
- 3 pieces of Serrano Chiles
- 2 units of Egg
- 1 tablespoon of salt
- 500 milliliters of Oil
- 2 garlic cloves
- 1 piece of onion
- 1 teaspoon of cloves
- 1 teaspoon of Pepper
- 1 branch of Episode
How to make Charales in green sauce:
- The first step to prepare the charales in green sauce is to gather all the ingredients. For those who are not in Mexico, the charales are small fish, typical of some lakes in the country; this fish is characterized by having a strong flavor and could be replaced by anchovies.
- Next, we clean the tomatoes; put them to cook together with the garlic, a piece of onion and the green chilies. Once cooked we are going to grind them in the blender and put them aside.
- In another container, boil the potatoes with a little salt until they soften. Remove them from the hot water and let them cool down. Then we peel them and cut them into squares.
- To prepare the charales, we remove their heads, rinse them twice and let them drain in a strainer. Later we toast them on a griddle.
- Separate the whites from the yolks and we are going to beat the whites to the point of nougat. When the whites are already firm we add the yolks one by one. Once they are well integrated, we will add the previously toasted charales.
- We put a frying pan on the stove over high heat and pour enough oil. Once it is very hot we are placing portions of a tablespoon to form the chiral pancakes. Once we have the pancakes, we put them to drain on a paper napkin to remove the excess fat.
- To make the green sauce, in another sauce pan we are going to place a little oil and brown the potato chopped into cubes. Once golden brown, lower the heat and pour the previously prepared green sauce. Let it boil and season with salt, pepper and ground cloves.
- Trick: Let’s remember that charales are salty; you have to use salt in moderation.
- We allow the green sauce to continue boiling for about five more minutes. Then, we add the chiral cakes along with a sprig of episode.
- We continue cooking the chiral pancakes in green sauce for another 10 minutes.
