Quinoa Recipe with Baked Vegetables

Ingredients to make Quinoa with baked vegetables:

  1. 1 unit of Eggplant
  2. 1 zucchini unit
  3. 1 unit of onion
  4. 1 unit of small red pepper
  5. 1 unit of ripe tomato
  6. 1 clove garlic
  7. 1 pinch of salt
  8. 1 pinch of Pepper
  9. 1 pinch of powdered ginger
  10. 1 pinch of Cinnamon
  11. 1 pinch of Marjoram
  12. 1 pinch of Mint
  13. 1 jet of Oil
  14. 1 cup of washed Quinoa (250 ml)
  15. 3 cups of Water (720 milliliters)

How to make Quinoa with baked vegetables:

  • We start the recipe by preparing the baked vegetables. To do this, cut the aborigine, zucchini, onion, red pepper and tomato into 1 cm cubes. Add the peeled and finely chopped garlic clove, salt, pepper, cinnamon, ginger, marjoram and mint to season the vegetables.
  • Place the already seasoned vegetables in an ovenproof dish and water them with a good jet of oil, mix well. Once this is done, bake them at a medium-high temperature until they are done and crispy. Halfway through cooking it is very important that you remove them so that they all become even. When they’re done, taste the seasoning and add more spices and seasonings if you want, without fear. You just have to be careful with cinnamon.
  • Reserve the roasted vegetables and get to work with the quinoa. To remove the spooning, you will need to wash the quinoa directly under running tap water. Use a fine mesh strainer to drain excess water.
  • Put the quinoa to cook with the three cups of salted water for approximately 15 minutes, until they are to your liking. Don’t cover the pot. To know if it is cooked, you should look to see if the grains have swollen and opened, revealing the pearly white edges.
  • When the quinoa is ready, you will also notice that practically all the water has been consumed. Of course, make sure that they do not overcook because then they will form a paste, they will not be al dente and the recipe for quinoa with baked vegetables will not be perfect. Drain the quinoa and mix it with the vegan margarine.
  • To serve, you have two options: mix the quinoa with the vegetables and serve it like this, or make a more elaborate presentation. If you have opted for the second option, take a plating ring, place two tablespoons of quinoa on the bottom, add two tablespoons of baked vegetables on top and cover with another layer of quinoa. Perform this process for each diner.
  • Cover the preparation with a thread of oil and sprinkle a little cinnamon and mint on top. And if you want, decorate with some fresh thyme leaves and saffron threads. When you try this quinoa dish with baked vegetables, you won’t be able to stop cooking it!
