Ingredients to make Breaded Sardines with Tomato Sauce:
- 12 large sardines.
- 1 fresh spring onion.
- 1 dl of olive oil 0´4º.
- A pinch of paprika.
- 1 cup of flour.
- 2 eggs.
- 1 cup of grated bread.
- 2 tablespoons of chopped parsley.
- 200 grams of pear type tomato.
- 1 tablespoon of thyme.
- 2 cloves of garlic.
- salt and black pepper
How to make Breaded Sardines with Tomato Sauce:
- We clean the sardines and remove the head, guts and spine. We beat the eggs with parsley, salt and pepper.
- Dip the sardines first in the flour, then in the beaten eggs and finally in the breadcrumbs (it must be pressed well so that the bread sticks).
- Heat the oil in a frying pan (reserving a tablespoon) and fry the sardines until the breadcrumbs turn golden.
- Crush the tomatoes, place them in a saucepan and cook together with a tablespoon of oil, the chopped fresh chives and garlic, paprika, thyme, salt and pepper.
- We serve the sardines in sauce with tomato sauce.
