Bonito a la Pharaona recipe

Ingredients to make Bonito a la Faraona:

  • kilo and a half of tuna
  • 200cc of oil
  • 50 grams of raisins
  • 50 grams of almonds
  • 2 kg of onions
  • 10 garlic cloves
  • 1 bay leaf
  • Oregano
  • thyme
  • Coarse jumped
  • 100 ml of vinegar
  • 1 liter of dry white wine

How to make Bonito a la Pharaona:

  1. Cut the bonito into cubes, and these are put in vinegar water (9 parts of water to one part of vinegar) for 30 minutes.
  2. After this time they are removed from the water and dried.
  3. Cut the onions into not very thin slices and reserve.
  4. In a wide frying pan, heat the oil and brown the garlic.
  5. Remove the garlic from the pan and place in a saucepan. The tuna cubes, already drained and marinated, are browned evenly in the pan and placed in the saucepan.
  6. In the same oil, brown the onions and also add them to the pan.
  7. Add the raisins, the peeled almonds, the bay leaf, and a teaspoon of oregano and another of thyme, a little salt and half the oil from the pan.
  8. Cover, until covered, with white wine.
  9. From the moment it starts to boil, give it 30 minutes, with the saucepan uncovered so that excess wine can evaporate. A few minutes before the end, add the vinegar and half a teaspoon of oregano.
  10. It is rectified with vinegar and salt and left to rest, with the heat off, for a minimum of ten minutes.
