Biscayne cod Mexican style recipe

Ingredients to make Mexican-style Biscayne cod:

  • 1 kilogram of Cod
  • 1 kilogram of tomato
  • 500 grams of onion
  • 2 sachets of Garlic
  • 1 bottle of olive oil
  • 1 bottle of chills guiros
  • 1 jar of Olives
  • 1 bottle of capers
  • 1 bunch of parsley

How to make Mexican-style Biscayne code:

  1. We are going to gather everything you need to prepare the Mexican-style Biscayne cod.
  2. Trick: If cod is not available, we can use other dried fish.
  3. The next thing we will do is salt the fish. To do this, we are going to cut the dried fish into pieces according to the recipe that we are going to prepare.
  4. Tip: If you prefer, you can buy the desalted cod.
  5. Now we are going to cut the cod into pieces, place it in a container and there we are going to add two liters of cold water per kilo of fish. We change the water every four hours for two or three days prior to its preparation.
  6. Trick: We must store the fish in the refrigerator or in a cool place and out of direct sunlight.
  7. Once the cod is desalted, we proceed to shred it and remove the skin and bones.
  8. On the other hand, we chop the tomato from which we previously removed the seeds. We also chop the onion, parsley and garlic to continue with the Mexican recipe.
  9. When we have all our ingredients ready, we are going to place a saucepan on the stove over medium heat and add enough olive oil to fry the minced garlic.
  10. When the garlic changes color, add the onion and mix.
  11. Let the onion cook and, when it is transparent, add the tomato, stir and continue cooking the Biscayan sauce for the Mexican-style fish.
  12. Then, we add the parsley and cook the ingredients for approximately 10 more minutes.
  13. Then, to continue preparing the Mexican-style Biscay cod, add the fish, mix it well and let it cook for another 10 to 15 minutes.
  14. Once the previous ingredients are integrated, we add the olives and capers mix and cook until the liquid is consumed a little according to our personal tastes.
  15. We serve the Mexican-style Biscayan cod and place some guiros chili peppers to accompany our dish. You can accompany this dish with corn tortillas, tortilla chips with guacamole or white rice.
  16. Trick: The cod cooked in this way is usually used to prepare cakes.
