Ingredients to make baked tuna in cider:
- 1 bonito loin clean of skin and spines of 1 kilo and a quarter.
- 4 carrots.
- 3 onions.
- Half a liter of cider.
- 1/2 small boat of lightened mayonnaise with natural yogurt.
- 2 dl of fumet (fish broth).
- A pinch of sugar.

How to make baked tuna in cider:
- The bonito loin is seasoned with a little salt and pepper and set aside.
- Peel the onions and carrots, cut them finely and put them in a pan with oil and a little salt.
- It is left until they are tender, but without taking color.
- At that point they are removed from the heat, drained of oil and put back on the heat with four tablespoons of the oil in which they were sautéed, the water and the cider and let it cook for ten minutes.
- After this time, it is removed from the heat and passed through the blender, rectifying with salt if necessary.
- Place the sauce in a baking dish, put the tuna loin on top and cover with the mayonnaise.
- It is placed in the oven at 170ºC for 12-15 minutes.
- Meanwhile, cook the peeled and turned potatoes in salted water until tender.
- If the mayonnaise browns too much, cover with aluminum foil.
