Ingredients to make BAKED SALMON TROUT:

  • 700 g clean trout fillets
  • 2 shallots
  • 250 g mushrooms
  • flour to coat
  • 100ml liquid cream
  • 1 cup vegetable broth
  • 25g butter
  • 75g oil
  • dill stick
  • salted
  • Pepper

How to make BAKED SALMON TROUT:

  1. Wash the trout fillets, removing the bones; Pat dry with absorbent paper and sprinkle with salt and dill.
  2. Divide each fillet into eight portions. Coat them in flour.
  3. Step 2 Fry the fish on both sides in a pan with oil and butter.
  4. Drain the excess oil on absorbent paper and place in a serving dish.
  5. Step 3 Chop the shallot and sauté it in the pan for frying the fish (strain the oil if necessary).
  6. Meanwhile, clean the mushrooms and chop into small pieces; Sauté in the pan with the shallot for two minutes.
  7. Add the broth and cream and stir, let the sauce reduce until it thickens.
  8. Season with salt and pepper and let cool; cover the fish with this sauce.
  9. Put the dish in the preheated oven at 200º C for 10 minutes, and serve garnished with a sprig of dill.
