Mackerel is a blue fish with a mild flavor and firm meat that requires little cooking. Thus, it is an ideal fish to prepare on the grill, in marinade or in the oven, as we propose below. If you ask the fishmonger to remove the bone in the middle and leave the fillets clean, it will be much better.

On this occasion we have chosen to make baked mackerel with potatoes and onion, however, this same recipe can be used to cook baked mackerel with various vegetables and even with lemon. At the end of it we will indicate how to make these modifications but, now, we are going with the step by step that we share to discover how to make baked mackerel, a quick and easy recipe.

Ingredients to make Baked Mackerel:

  • 2 clean mackerels
  • 2 potatoes
  • 1 onion
  • 2 garlic cloves
  • 1 pinch of parsley
  • 1 small glass of white wine

How to make Baked Mackerel:

  1. Peel and cut the potatoes and onion. Then, we put these ingredients in a baking tray, sprinkle them with a little olive oil, sprinkle salt to taste and bake for 15 minutes, with the oven preheated to 180ºC.
  2. Tip: This step can also be done in a frying pan or in the microwave, and then put the cooked potatoes and onion on the baking tray.
  3. Chop the garlic and parsley, put them in a mortar, crush them and mix with a little olive oil and white wine.
  4. When the potatoes are almost cooked, we remove the tray from the oven, place the mackerel fillets on top and add the previous preparation of garlic, parsley and oil. Once this is done, we cook the mackerel in the oven for 7-10 minutes. The cooking time will depend on the type of oven and the size of the fish, so we recommend being careful to avoid overcooking.
  5. When the fish is ready, we take the tray out of the oven, sprinkle a little parsley and that’s it. This baked mackerel with potatoes recipe is very easy and quick, since the oven takes care of practically everything. We can accompany the dish with a tomato salad or serve it plain.

Baked mackerel with vegetables

We can include all the vegetables that we can think of or fancy, such as green and red peppers, aborigines, leeks or zucchini. To do this, we simply have to wash them well, chop them up and add them to the tray to cook them with the potatoes before including the mackerel. Likewise, we can cook the vegetables sautéed or in the microwave.

If we feel like preparing baked mackerel in tomato sauce, we will follow the previous instructions but, instead of making the garlic and parsley mince, we will crush a couple of tomatoes or we will use already crushed tomato to spread the fish fillets and bake. On the other hand, we can cut the tomatoes into slices or in half, and add them to the tray when adding the mackerel fillets.

To carry out this preparation, we recommend cooking the potatoes separately. To do this, we do not necessarily have to bake them; we can make baked potatoes in a pan or roast potatoes in the microwave. Then, we simply have to cut the vegetables we want into thin strips, place them on a sheet of baking paper, place a mackerel fillet on top, add a drizzle of olive oil, close the package and bake for 10 minutes. We can also use aluminum foil.
