Ingredients to make Red Fruit Cheesecake:

  • For the base:
  • 225 grams of cookies
  • 100 grams of butter
  • For the filling:
  • 600 grams of Philadelphia type cream cheese
  • 125 grams of sugar
  • 50 milliliters of whipping cream
  • 1 dessert spoon cornstarch
  • 3 eggs
  • To decorate:
  • 200 grams of red fruit coulis or red fruit jam
  • 200 grams of fresh mixed red fruits

How to make Red Berry Cheesecake:

  1. Prepare the base of the red fruit tart.
  2.  To do this, crush the cookies with a food processor or by putting the chopped cookies in a plastic bag and passing a rolling pin over them until they are crumbs.
  3. Trick: Choose the cookies that you like the most, they can be cinnamon, ginger, oatmeal, oreo type or whatever you have at home.
  4. Melt the butter in the microwave and mix with the cookie crumbs until you get a paste.
  5. Grease a round removable moldof about 22-24 cm and place the cookie base in the bottom.
  6. Squeeze the cookies with your hands so that they are well attached to the base.
  7. Reserve in the fridge.
  8. Preheat the oven to 150ºC. In a large bowl, place the fresh cheese, cream, cornstarch, eggs and sugar; mix well. You can use the beaters of an electric mixer, but beat only until the ingredients are integrated.
  9. Take the mold out of the fridge and carefully pour in the cheese mixture. Bake at 150ºC with heat up and down for 45 minutes.
  10.  After the time has elapsed, turn off the oven and let the cake cool inside or, at least, leave it in the turned off oven for another 45 minutes.
  11.  Take out the forest fruit cheesecake and keep it in the fridge for at least 4 hours to cool.
  12. When serving, decorate with the red fruit coulis on top and with the fresh red fruits.
  13. If you don’t have red fruit coulis, you can prepare it in the link recipe or use jam. Heat the jam with a tablespoon of water in the microwave and it is ready to use.
