Ingredients to make Baked Cod with Roasted Garlic:
- 350 grams of fresh cod
- 2 sachets of Garlic
- 1 pinch of olive oil
- 1 pinch of salt
- 1 pinch of ground black pepper
How to make Baked Cod with Roasted Garlic:
- We gather all the ingredients to prepare the baked cod with roasted garlic.
- We remove the outer layers of the garlic without peeling them completely, as seen in the image. We place them on silver paper and add a splash of oil.
- Garlic is a widely consumed product in Spain, traditionally used to combat colds. In addition, they have properties such as vitamin B6, which enhances the defenses.
- Place the heads of garlic in individual silver foil, wrap and put in the oven at 175ºC for 1 hour and a half. In this way, the garlic will cook over medium heat and will be tender.
- Once cooked, peel the garlic one by one and place them in a bowl or in a glass suitable for the blender
- Spray the roasted garlic with a little olive oil, salt and ground black pepper, and crush them with the help of a mortar or blender.
- We put the cod in the oven at 180 ºC for approximately 13 minutes. After that time, we take it out, cover it with the roasted garlic cream and put it back in the oven to cook it au gratin for another 5 minutes.
- For this recipe we have used fresh cod to the point of salt, so it has not been necessary to add more salt.
- We accompany this recipe for baked cod with roasted garlic with some cooked green beans or a stir-fry of vegetables and mushrooms.
