  1. To start preparing your loco de trigon, rinse the cereal until the water runs clear.
  2. Let it soak in the fridge for 12 hours. Once that time has passed, boil it for approximately 20 minutes. Keep in mind that it will cook with the loco later too, so it doesn’t need to be so soft at this point.
  3. While the wheat is cooking, peel, chop and brown the onion in a pot or saucepan over high heat with 1 teaspoon of hot oil.
  4. Once golden or transparent, add the chopped bell pepper. For this loco de trigon recipe you can choose green or red pepper, both are perfect!
  5. When the bell pepper is golden, take the vegetables to the sides and in the center add the carrot and the meat cut into cubes. Seal the meat on all sides and bring it to the edges as well. Repeat the process with the smoked bacon.

  7. While the meats brown, prick and boil the chorizo ​​for 5 minutes. Then cut it into slices.
  8. Add the cut chorizo, the wheat, the peeled and cubed squash, and the seasonings to the sautéed sauce and cover all your preparation with boiling water. Lower the heat, cover it and cook it for 1 hour, stirring it from time to time so that the preparation does not stick to the bottom and check that it does not run out of water. If this happens, add more water, always hot.
  9. After that time, you can serve and enjoy your candela wheat loco. You could also let it cool for 2 hours and divide it up to chill in the fridge for 3 days or 3 months in the freezer. We recommend accompanying it with boiled white rice..

Spicy sauce to accompany your wheat loco

If you want, you can accompany your loco with a spicy sauce. To do this, follow these steps:

  1. Chop 1 small onion, 1 clove of garlic and 4 sprigs of green onion.
  2. Sauté them with 1 tablespoon of neutral oil or fat.
  3. Once cooked, season them with ground chili, a pinch of cumin and sweet paprika.
  4. Add half a cup of hot water and lower the heat to medium.
  5. Let it boil for about 5 minutes. Serve it and let it cool down to enjoy it with the very hot wheat loco.
