Vegetarian Stew Recipe

Ingredients to make Vegetarian Stew:

  • 1 large or 2 medium eggplants, peeled and diced
  • 2 large diced tomatoes
  • 2 large onions cut in 1/8
  • 3 minced garlic cloves
  • 1/2 pumpkin or wide squash in cubes
  • 3 round zucchini in cubes
  • 1 large diced potato
  • 1 tbsp. margarine or butter
  • 1 cup of water
  • Salt
  • pepper to taste
  • grated cheese (optional)

How to make Vegetarian Stew:

  1. In a saucepan, place the tablespoon of margarine or butter and when it has melted, add the onions and fry them for a little while.
  2. Add the eggplant, the zucchini, the garlic, the potato, the pumpkin, the tomatoes and the water.
  3. Season and stir to prevent it from sticking. When the potato and pumpkin are very tender, remove from heat and serve in pots.
  4. If desired, sprinkle with a good grated cheese.
