Ingredients to make Vegetarian Chickpeas:
- 400 grams Chickpeas (soaked overnight)
- 2 onions
- 1 Carrot
- 1/2 Zucchini
- 3 Tomatoes
- 3 Potatoes cut into cubes
- 1 clove garlic
- 1 teaspoon paprika
- 4 sprigs of coriander
- Salt
- Pepper
How to make Vegetarian Chickpeas:
- List the ingredients.
- Cook the chickpeas in plenty of salted water. Keep in mind that the water will reduce a lot later; we will put more or less quantity, if we want more or less broth at the end of cooking.
- Cut the carrot, corvette and tomatoes into small cubes. Finely chop the garlic and onions.
- Prepare a sauce with the onions, garlic and tomato. Season with salt, pepper and paprika.
- When the chickpeas begin to soften, after approximately 20 minutes, add the carrots and zucchini. Cover again and cook for another 10 minutes.
- Add the potatoes and the soffit. Mix, cover and cook until the potatoes are tender, but not broken. If you like, add a few sprigs of coriander.
- Serve and enjoy hot!
