Vegetable stew is a typical Spanish dish, which is made especially in winter as it is served very hot and has a high caloric component. Here we explain how to make this recipe with the thermo mix.

Ingredients to make vegetable stew with the Thermo mix:
- 250 g peeled carrots
- 250g frozen spinach
- 50 g of extra virgin olive oil
- 150g leeks, sliced (white part only)
- 150 g of potatoes in small pieces
- 1 garlic clove
- 2 tablets of chicken broth or salt
- 800 g of water pepper to taste
- 2 tablespoons chopped coriander (optional)
How to make vegetable stew with the Thermo mix:
- Grate the carrots, leeks and garlic for 10 seconds at speed 5; helping you with the spatula, add the oil and program 5 min, temperature 100º, speed 1 1/2.
- Incorporate the potatoes, spinach, the condiments and the water, program 30 min, temperature 100º, speed 1.
- When finished, check the amount of liquid and add more water if you wish, correct the seasoning and serve hot with the chopped coriander.
- You can add 200g of cooked chickpeas.
