Ingredients to make Vegan Vegetable Stew:
- 2 cheap oranges
- 2 carrots
- 1 bunch kale or kale
- 1 stick of celery
- 1 onion
- 3 tomatoes
- 1 teaspoon sweet paprika
- 1 pinch of salt
- 1 pinch of pepper
- 1 teaspoon ginger powder
- ½ teaspoon of turmeric
- 2 tablespoons of oil
- 1 liter of vegetable broth
How to make Vegan Vegetable Stew:
- Peel the vegetable, cut the sweet potato into medium pieces and the carrot and celery into slices. Dice the onion and tomatoes (you can scald them if you don’t like the skin) and chop the kale.
- In a pot, heat the oil and fry the onion, celery and tomato. When you have the sauce ready, add the carrot and sweet potato and cook for several minutes until they begin to soften. Add kale and continue cooking for another 5 minutes, stirring occasionally.
- Pour the vegetable broth into the pot, covering the vegetables. It also incorporates the spices: paprika, salt, pepper, turmeric and ginger.
- Bring the broth to a boil and lower the heat to medium. We cook the vegetarian vegetable stew until the broth is reduced and the vegetables are fully cooked.
