Ingredients to make tripe stew:
- ¾ kg of cooked tripe
- 50cc of olive oil
- 1 chopped onion
- 1 can of diced plum tomatoes
- 2 bay leaves
- chopped parsley
- 3 potatoes, said
- 2 carrots
- Vegetable broth as needed
- Salt
- pepper-to-taste
How to make tripe stew:
- Cut the tripe into strips. In a frying pan with oil brown the onion.
- Add the tomatoes, the tripe and continue to heat, stirring well.
- Add the bay leaves, season with salt and pepper and add the potatoes, carrots, broth and season to taste.
- Let it boil over moderate heat until everything is cooked.
