Ingredients to make Tongue Casserole:
- 1kg beef ham
- 1 veal tongue
- 500g beef tail
- 1 bone with brown
- 1 large onion chopped
- 1 clove
- 3 garlic cloves
- 500g small leeks
- 500g turnip
- 3 carrots
- 2 sticks of celery
- 1 green cabbage
- 6 small chips
- Salt
- peppercorns
How to make Tongue Casserole:
- Rub your tongue in clean tap water.
- Cut it to remove the skin and the protruding parts.
- Put the tongue, tail and leg in a large saucepan.
- Cover with 3 liters of cold water.
- Add 1 tablespoon of peppercorns, the salt, the garlic and the peeled onion.
- Bring to boil and skim off the foam, simmer for 2 hours.
- In the meantime, clean the cabbage, de-husk it and wash it.
- Peel the turnips and carrots, arrange the celery and clean the leeks.
- Add these vegetables and the bone, 30 minutes before the end of the cooking of the meat
- Peel the potatoes and put those 15 minutes later.
- Cut the meat, put them in a bowl with the vegetables and add the broth from the stew.
- Serve hot.
