Ingredients to make Tomato and Pepper Stew:
- 2 tablespoons olive oil
- 1 large red onion
- 2 large red bell peppers, diced
- 1 large green bell pepper, chopped
- 4 large ripe tomatoes, peeled and diced
- 2 teaspoons of brown sugar
How to make Tomato and Pepper Stew:
- Heat the oil in a medium saucepan; add the chopped onion and sauté over low heat until tender.
- Add the peppers and cook over medium heat for 5 minutes, stir.
- Add the tomatoes and sugar.
- Lower the heat, cover and cook until the vegetables are tender.
