Ingredients to make STEWED TOMATOES CASSEROLE:
- 300ml water
- 50ml cider
- 500 g tomatoes of the pear variety
- 2 onions
- 2 garlic cloves
- 3 corvettes
- 2 carrots
- 1 turnip
- oregano
- 25ml olive oil
- Salt
- Pepper
How to make STEWED TOMATOES CASSEROLE:
- Wash and dry the tomatoes. Peel and finely chop the onions and garlic. Peel and chop the corvettes, carrots and turnip.
- Step 2 in a clay pot, stew the onions and garlic with a tablespoon of oil, when they begin to be transparent, add the rest of the vegetables.
- Season with salt, pepper and oregano, sauté for a few minutes and add the water and cider, let it cook over low heat
- Step 3 when the tomatoes are ready, remove the pot from the heat and add a few sprigs of fresh oregano, if desired it can be served with slices of toasted bread.
