Roasted Peanut Copa Recipe

Ingredients to make Roasted Peanut Copa:

  • 1 kilo of medium-sized white potatoes
  • 6 cloves of garlic
  • 2 finely chopped onions
  • 6 green peppers (peppers) without seeds
  • 125 grams of ground sweet biscuit
  • 100 grams of roasted peanuts (corn)
  • a bit of huacatay
  • 50 grams of fresh cheese crumbled
  • a cup of evaporated milk
  • Salt

How to make Roasted Peanut Copa:

  1. Cook the potatoes with skin in salted water. Fry the garlic cloves, the onion, the huacatay and the peppers in a little oil, trying to brown them a little. Pour into the blender jar and add the biscuit, cheese and milk little by little and also the salt and a little oil so that a thick consistency sauce is finally left. Pour over potatoes and garnish with lettuce.
  2. It is served at room temperature. Huacatay: vegetable with a strong flavor and smell. Widely used in Arequipa food and in the mountains in general.
