When it gets cold, we usually eat spoon dishes and foods that make us warm up. This time, for this, we bring you a dish that will surprise you very pleasantly, both for its simplicity and for its flavor and for how cheap it is. This recipe for revolconas potatoes or potatoes manias is very common in places like Extremadura, Castillo y León in Ávila and Salamanca. It is a dish with a base of potatoes, garlic and paprika that is accompanied by a cover of meat, usually torrents or bacon with fresh bacon. The potatoes are smashed to give it a pureed texture that will pair deliciously with the meat.
Ingredients to make Revolconas Potatoes or Menes Potatoes:
- 3 large potatoes
- 2 cloves of garlic
- 1 glass of olive oil
- 2 tablespoons of paprika from the Vera or sweet
- 2 dessert spoons of salt
- 1 bay leaf
- 1 pinch of ground black pepper
- 1 liter of water
- 1 bacon fillet, 2 centimeters thick
How to make Revolconas Potatoes or Menes Potatoes:
- To start with this recipe for machaconas potatoes put a pot to cook with water, peel the potatoes and garlic cloves.
- When the water starts to boil, add the potatoes cut into quarters, the chopped garlic cloves, the bay leaf and the salt. Some of this salt is reserved to add to the fresh pancetta if needed. Let cook for half an hour. Cut the fresh bacon into thick strips.
- Trick: check if the potato is cooked by poking it.
- In a clay pot, pour a good splash of olive oil and, once hot, fry the pancetta, stirring often. After about four minutes, the bacon will be ready to be removed and set aside. Turn off the heat in the pan and continue with your potato scramble recipe.
- Trick: give it that point of salt that fresh bacon needs.
- In the same oil in which the bacon was fried, pour the paprika and ground pepper with the heat off to prevent the paprika from burning. Stir for a minute to temper the oil with the paprika.
- Once the potatoes are fully cooked, remove them with a kitchen utensil that drains them when removed and reserves their water to lighten the dish if you need it or you like it.
- Place the potatoes and garlic in the clay pot with the oil with paprika and bring to a low heat while you crush the potatoes together with the garlic. We opted to leave the revolconas potatoes half crushed and, thus, achieve a more solid texture.
- Remove from the heat after three minutes of exposure and add a good splash of water from the cooking of the manias potatoes, this gives the dish more softness and lightness.
- Serve the revolconas potatoes with the pieces of bacon on top and some thin whole-grain toast to accompany. Enjoy!
