Ingredients to make Red Chicken Stew:
- 1 chicken cut into pieces or 2 1/2 pounds of chicken pieces
- Salt
- Pepper
- 2 tablespoons olive oil
- 1 medium chopped onion
- 2 chopped carrots
- 3 garlic cloves, minced
- 1 minced green chili (canella)
- 2 diced tomatoes or a can of peeled tomatoes without draining
- 1 chicken bouillon cube
- 3 tablespoons chopped stuffed olives
How to make Red Chicken Stew:
- Season the chicken with salt and pepper.
- In a large cauldron or pot, heat the oil and brown the chicken, 2 to 3 minutes on each side.
- Remove from the pot and place on a plate where you sauté the vegetables.
- If you need to add a little more oil.
- Sauté onion, carrot, garlic and tomatoes until tender.
- Return the chicken and add the cube and cover with water (little), bring to a boil.
- Add the tomatoes or tomato paste, olives, bay leaf and oregano.
- Reduce the heat a little and keep a gentle boil, until the chicken is tender.
- Taste and adjust seasoning with salt and pepper
- Before serving add the cilantro, you can add peeled and chopped potatoes when returning the chicken to the pot to boil with the stew.
- Serve with white rice.
