Ingredients to make Potage del la Reina:
- 100 centiliter cup of oil
- 1 large onion, finely chopped
- 1 sliced celery stalk
- 2 baby carrots cut into small sticks
- 250 g cooked broccoli florets
- 150 g of cooked peas
- 100 g of pitted green olives
- 2 tablespoons of parsley
- 5 liters of vegetable broth
- Salt
- Pepper
- 1 large potato, cut into very small cubes
How to make Potage del la Reina:
- Put the oil and onion in a saucepan; fry until lightly browned and add the celery, carrots, boiling broth, salt and pepper, and simmer covered for 20 minutes slowly.
- Then add the potatoes and continue cooking the same way, until they are tender.
- Add after the peas and cauliflower in small bouquets.
- Heat these last ingredients and, at the time of serving, add the parsley and the olives.
