The no-bake yogurt cake is very refreshing, easy to make and versatile, since we can change its flavor by modifying the flavor of the yogurt. On this occasion, I have chosen stracciatella yogurt, but there are so many flavors that we can count on today that, with the same technique, we can make a yogurt cake every day depending on its flavor. We can also use as a base an infinity of cookies, chocolate, cinnamon, butter… Likewise, to achieve a creamy texture, we will add cream to the ingredients, preparing an exquisite yogurt and cream cake.

Ingredients to make yogurt cake without oven:
- For the base of the yogurt cake:
- 250 grams of cookies
- 100 grams of butter
- For the yogurt cake filling:
- 8 gelatin sheets
- 100 grams of condensed milk
- 500 grams of sweetened Greek yogurt
- 250 milliliters of whipping cream (milk cream)
How to make yogurt cake without oven:
- First of all, we are going to make the base of the yogurt cake without oven. To do this, in a kitchen robot we crush the cookies.
- If we don’t have a kitchen robot, we put them in a plastic bag and crush them with a rolling pin, pestle, wooden mallet… I have used chocolate chip cookies, but you can use your favorite cookies.
- Melt the butter in the microwave and mix it with the crushed biscuits to form a homogeneous paste.
- In a round mold of about 20 cm in diameter, greased (preferably removable), place the butter paste with biscuits and flatten it with a spoon or by hand. We reserve the mold in the fridge so that the base cools down while we make the filling.
- Now, we go with the filling. To do so, we put the gelatin sheets in water and hydrate them for about 8 minutes. Instead, we can use agar-agar or make curd yogurt cake.
- Heat the condensed milk until it boils, in a saucepan on the fire or in the microwave.
- Drain the gelatin sheets by squeezing them with your hands and add them one by one to the condensed milk while beating quickly.
- It is important to beat vigorously so that the gelatin is fully integrated and there are no lumps.
- In a large bowl, we put the Greek yogurt and condensed milk, mix it well.
- As I said, I have decided to make a stracciatella Greek yogurt cake, but the truth is that you can use the yogurt that you like the most, such as strawberry, lemon or natural yogurt.
- We beat the cream with the help of some electric rods and incorporate it into the previous mixture with enveloping movements, integrating all the ingredients well.
- Take the mold out of the fridge and gradually pour the yogurt filling, leveling the surface.
- Cover with a sheet of cling film and put the mold back in the fridge for at least 6 hours.
- This is a cold yogurt cake that is much better the next day, so if we have the opportunity, we recommend leaving it in the fridge overnight.
- When serving, carefully unmold, passing a knife around the edges of the cake.
- We can decorate the no-bake yogurt cake with wafer or fondant flowers, with chocolate chips, etc.
- As this cake contains cream, it should be consumed within a maximum period of 3-4 days and always be kept in the fridge.
