Oleo stew is one of the most traditional recipes of Amara gastronomy, with products from the land and lots of flavor, we give you the keys to learn how to prepare it and enjoy this spectacular dish, keep reading!

Ingredients to make Potage de olio:

  • ½ kilogram of Oleo chopped
  • ½ kilogram of chopped potatoes
  • 12 pinches of salt to taste
  • 2 cups of chichi de jota
  • 2 tablespoons ground dried chili
  • 1 tablespoon of sugar
  • 2 tablespoons of butter
  • Chopped fresh cheese

How to make olio stew:

  1. To prepare the traditional potage de olio you will need a clay pot. Put the chili, butter, sugar, salt and chichi de jota into it. Mix and let everything cook for 10 minutes over medium heat.
  2. After the time, add the olio and the previously sanchochadas potatoes. Let the stew cook over low heat for about half an hour.
  3. When it’s ready, turn off the heat and remove the pot. Sprinkle the olio stew with fresh cheese to taste and a little parsley. Serve it hot and accompanied by white rice.
