Ingredients to make Lolita alcoyana:

  • 400 grams of dried white beans
  • 500 grams of varied meat (bacon, bacon, pork ribs, lean meat…)
  • 50 grams of rice
  • 1 black pudding
  • 1 bunch of Swiss chard
  • 1 piece of turnip
  • 1 piece of leek
  • 1 splash of olive oil
  • 1 pinch of salt

How to make Lolita alcoyana:

  1. Soak the beans for 12 hours and drain. If you’re using canned beans, this step won’t be necessary.
  2. Put the beans in a pot with the meat, which you can incorporate cut into small pieces so that it cooks before. Peel the turnip and add a piece, wash the leek and add it to the pot as well. Cover everything with water and cook over high heat. When it starts to boil, remove the foam that forms on the surface. Lower the heat and cook the Lolita alcoyana over low heat for an hour or more, depending on the type of fire and bean. If you make the Lolita alcoyana in a pressure cooker, 40 minutes will be enough.
  3. Halfway through cooking, you have to “scare” the beans, which are achieved by adding a glass of cold water while they cook. You should do this 3 times, so they cook better and do not peel.
  4. Tip: if you use canned beans, the time will be less, so it will depend on the type of meat used.
  5. After an hour or an hour and a half, wash the chard, remove the threads and add them to the pot. You can also add the pence’s if you want or save them for another recipe, such as stuffed pence’s. Also add the handful of rice and a pinch of salt. Let cook everything together until the beans and rice are finished cooking. If necessary, you can add more water.
  6. Tip: this stew usually needs a lot of water, since it takes around 2 hours to cook in a conventional pot and 50 minutes or an hour in an express pot.
  7. Fry the blood sausages in a separate pan to add them to the pot at the last moment. If you prefer, you can also add them in the previous step without frying them first, but this way the stew has more flavor.
  8. Once everything is ready, taste the salt and rectify if necessary. At the last minute, add the black pudding and cook for 5 more minutes. Turn off the heat and let the stew rest.
