How to make Olla podrida original recipe:

  1. The day before, the well-washed beans are soaked in cold water and in a separate casserole we also soak the pork ingredients, except for the black pudding and chorizo.
  2. Preparation of the stew:
  3. In a saucepan, cook the beans with the onion, leek, carrot, and without salt with the water from having been soaked, and lightly cover them. The casserole should be half covered and over low heat.
  4. When they boil we scare them, pouring a glass of very cold water, we leave them with more or less 2 fingers more of water. And continue cooking slowly and slightly covered, for 30-40 minutes.
