Ingredients to make Old Indian:
- For the meat:
- 2 pounds of beef shank or chicken shank
- 1 onion
- 1 bell pepper
- ½ head of garlic
- Salt
- For the mass:
- 8 ounces corn dough or 10 tortilla chips
- ½ tablespoon of oil
- 1 onion
- ½ head of garlic
- 1 teaspoon pepper
- 1 pinch of cumin
- sour orange juice
- 5 bunches of mint
- 3 tomatoes
- To fry the meat:
- ½ cup of lard
- 2 large onions chopped
- 2 large chopped bell peppers
- For the Creole sauce:
- 1 teaspoon of oil
- 2 sliced tomatoes
- 2 medium onions sliced
- 3 tablespoons tomato sauce
- 1 teaspoon of sugar
- ½ cup of water
- Salt
- pepper-to-taste
How to make Old Indian:
- Boil the meat with the onion, chiltoma, garlic and salt with enough water until it softens.
- Remove the meat and shred it (shred it), finely.
- Strain the broth and save it for later use in the preparation of the old Indian.
- If you have a tortilla, break it into pieces and soak them for an hour with part of the broth or if you have flour, knead it with a little broth, to the dough that you obtained, either tortilla or flour, add, in a blended form, the onion, chiltoma, garlic, pepper, cumin, tomato and achiote.
- Add more broth until it is like a thick porridge.
- Fry in the lard, the chopped onion and chiltoma together with the shredded meat.
- When it is a little fried, add the atoll of the dough and continue cooking, moving continuously for about 15 minutes so that it does not stick or until it takes on a golden appearance.
- Finally, add 5 branches of mint, sour orange juice to taste.
- Season with salt to taste and if it is too dry, add broth, serve with Creole sauce and put on top of the old Indian when serving.
- Procedure for Creole sauce: Fry the sliced onion and tomatoes in oil, then add the other ingredients and leave it for a moment to taste.
