Ingredients to make Kangaroo Stew:
- 1 cup of a good red wine
- 1 teaspoon chopped chives
- 1 minced garlic clove
- 1 small onion
- 500 gr of kangaroo tenderloin
- 1 tablespoon of oil
- ½ cup of cream
How to make Kangaroo Stew:
- Combine the wine, chives, garlic and chopped onion in a deep bowl
- Add the kangaroo and marinate in the refrigerator for at least 2 hours.
- Heat the oil in the pan and add the meat.
- Roast for 2 minutes over high heat.
- If you prefer more cooked, roast for 2 more minutes.
- Remove from heat and keep warm.
- Add the maceration liquid and the cream to the meat roasting juices, place over low heat and boil for 3 minutes or until the sauce thickens a little.
