Ingredients to make hare stew with paprika:
- For 4 people:
- 1 hare.
- 30 g of lard (can be replaced with 1 dl of 1º olive oil).
- 250 g of onion.
- 250 g of tomatoes.
- 2 bell peppers.
- 1 glass of red wine aging.
- 1 glass of water.
- 1 bay leaf

How to make hare stew with paprika:
- We clean the hare and cut into small pieces.
- Peel and chop the onions very small.
- We roast the peppers on the grill or in the oven.
- Peel the peppers and cut into thin strips.
- Heat water in a saucepan and submerge the tomatoes for 30 seconds, remove and peel them, removing the seeds and cutting them into pieces.
- In a saucepan, heat the butter and fry the chopped onions.
- Season with a pinch of salt and 2 tablespoons of paprika but lowering the heat a little so that the paprika does not burn.
- Add the pieces of hare and stir so that they fry a little and take on the color of the paprika.
- Add the glass of red wine, the glass of water and the bay leaf.
- Cover the pan and cook over a very low heat for 2 hours, sprinkling occasionally with a little water or broth if the stew dries out.
- Add the chopped tomatoes and pepper after 2 hours of cooking and let cook for 20 more minutes.
- We put the point of salt at the end and serve in the same casserole.
