Ingredients to make Fresh Pot of Albacete:
- For 4 people:
- 200 g of white beans.
- 350 g of backbone.
- 350 g of pork tail.
- 200 g of fresh bacon.
- 200g of potatoes.
- 100 g of turnip.
- 200 g of cabbage.
- 2 fresh blood sausages.
- 200 grams of onion.
- 1 head of garlic.
How to make Fresh Pot of Albacete:
- We soak the beans the day before.
- With the same soaking water we cook all the ingredients except the potato, the turnip and the cabbage.
- The black pudding after about 20 minutes of cooking, we take it out and reserve.
- When the stew is almost ready, add the chopped potatoes and turnips.
- We make a rehash with garlic and paprika and add to the pot and chop the meats.
- In a separate pan, cook the cabbage and reserve.
- We present the beans, and on a tray the meats, accompanied by the cabbage.
