The vegetarian wraps that I share below represent a complete meal if we accompany them with a salad. They are made with mushrooms, celery, apple and other ingredients that you cannot miss if you want to discover the intense flavor that these rolls can offer you. Likewise, as they do not contain ingredients of animal origin, they are also suitable for vegans. On the other hand, these vegetable wraps are ideal for all those people intolerant to gluten, since the tortillas are made with corn flour.

Ingredients to make Vegetarian Mushroom Wraps:
- 400 grams of assorted mushrooms
- 4 stalks of celery cleaned
- ½ red apple
- 1 clove garlic
- 2 tablespoons of olive oil
- 3 tablespoons of Chickpeas
- 1 tablespoon of Tahini
- Balsamic vinegar
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch of sweet paprika
- 1 pinch of Chives
- 4 corn tortillas
How to make Vegetarian Mushroom Wraps:
In order to start preparing the gluten-free vegetarian wraps, the first thing we must do is cut the celery stalks, already clean and without threads, into strips of approximately 1 cm. Then, we cut these strips into cubes.
Then, with our hands, we separate the mushrooms into strips. I have used pleurotus mushrooms, but you can use any other type of mushroom to make vegan wraps.
Take a large, deep frying pan, heat the olive oil and, once hot, fry the celery. When we observe that it becomes transparent, we incorporate the minced garlic and the apple cut into small cubes. Mix well and add the mushroom strips. We cook the filling of the vegetarian wraps stirring constantly with a wooden spoon until the mushrooms release the water and begin to brown.
Once we see that the mushrooms begin to toast, we add the chickpeas, the tahini sauce and a splash of Modena vinegar. We mix again and add a little hot water if we see that the filling of the vegetarian wraps is too thick.
Tahini sauce is made from roasted and ground sesame and, despite the fact that many people doubt whether this product contains gluten or not, the truth is that it is totally free of this substance, making it suitable for people with celiac disease. Of course, it is possible that during the manufacturing process it has been contaminated, so it will be essential to check the manufacturer.
We turn off the heat when the preparation is ready and add salt, pepper, sweet paprika and fresh chives to taste to give an extra touch of flavor to the vegetarian mushroom wraps. Remove the pan from the heat and let it cool to room temperature. To assemble the vegetarian wraps, we heat the corn tortillas in the microwave for 1 minute. You can buy the tortillas already prepared, or make them yourself.
Once hot, we fill the tortillas by placing a good amount of the previous preparation in the lower part, as shown in the photograph. It should be noted that my tortillas were 30 cm in diameter.
Fold the bottom up, completely covering the filling. Then, we take the ends of the tortilla and fold those inwards, as shown in the photograph. This done, we just rolled up. Clever! We serve the vegetarian mushroom wraps accompanied by a delicious arugula salad, or the one that we like the most! And if you want to give it a different touch, I advise you to pass them through the pan once assembled to lightly toast them.
