When the end of the day comes, the only thing I feel like preparing are easy recipes for dinner. Light dinners are important to have a sound sleep and also free us from calories that are not necessary while we rest.
The wrap with vegetables is one of my allies at dinner time. Since I love vegetarian recipes so much, I thought I’d make this light snack with the vegetables I had in the fridge. Ingredients to make Vegetable Wrap with roasted vegetables:
- 1 unit of Carrot
- ½ unit of Zucchini
- 1 piece of spring onion
- 1 piece of red pepper
- 1 piece of green pepper
- 2 units of wheat tortillas
- 1 pinch of salt
To accompany
- 1 squeeze of lemon
- 1 unit of Avocado
How to make Vegetable Wrap with Roasted Vegetables:
We gather all the ingredients to prepare the vegetable wrap of roasted vegetables. Wash the peppers and cut them into sticks, in the same way as the spring onion.
If you don’t have spring onion you can use onion, I prefer the first one because it has a sweeter flavor. In a frying pan with a little olive oil, roast the peppers together with the spring onion. Let them cook for 5-7 minutes.
We also cut the zucchini into sticks without removing the skin. Add the zucchini to the pan and add a little salt and ground black pepper. Let cook for 3-4 minutes. If you feel like it, you can add other spices such as curry, cumin or turmeric.
Trick: Remember to wash the zucchini before cutting it.
Finally, add the carrot, peeled and also cut into sticks. Let the vegetables cook for 4 more minutes and remove from the heat. We heat the tortillas for wraps in a pan on both sides so that they are slightly toasted. We fill each wrap with a little vegetables and roll it up as if it were an éclair.
