Vegan Vegetable Quiche Recipe

The or the quiche (depending on the country) is a savory cake from French cuisine. This vegan tofu quiche is a healthy and vegan alternative (egg free and dairy free) that I want to share.

The vegan quiche dough is made from cooked rice and chickpea flour, therefore it is gluten-free and low in fat. It is a good option to take advantage of leftover rice. The filling of the  vegan quiche with leek is tofu and assorted vegetables. But optionally any vegetable can be added to the filling.

Ingredients to make vegan vegetable quiche:

For the vegan quiche dough:

  • 2 cups of cooked rice (350 grams)
  • ½ cup of rice milk
  • 1 cup of chickpea flour
  • ½ teaspoon of salt

For the filling:

  • 250 grams of soft Tofu
  • 1 tablespoon of Tomato concentrate
  • 1 unit of Carrot
  • 1 unit of Leek
  • 1 unit of Onion
  • 2 cloves of garlic
  • 1 tablespoon vegetable oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Vegan Vegetable Quiche:

The first thing we have to do to make this vegan vegetable quiche is prepare the dough. To do this, in a large bowl, mix the cooked rice and the rice milk. Gradually add the chickpea flour, stirring well, until a dense and manageable dough forms.

Trick: You can use any type of non-dairy milk.

We grease a round mold with high edges and place the vegan quiche dough inside. With our hands or with a spoon we give the shape of the mold to the dough of the quiche without dairy. Preheat the oven to 180ºC and bake the vegan quiche dough for about 5 minutes. Meanwhile, we prepare the filling. Blend the tofu in a blender. Chop the onion, the garlic, the leek and grate the carrot.

Tip: If you’re using hard tofu, add several tablespoons of soy milk for a softer vegan tofu quiche filling.

Heat the oil in a frying pan and fry the onion, garlic and leek. Add the carrot and cook until softened. Next, add the crushed tofu, the concentrated tomato and season with salt and pepper. Sauté the easy vegan quiche filling for another 10 minutes, stirring occasionally. Once ready, we fill the quiche with tofu and vegetables and bake it for about 15 minutes. When it is golden, we can serve the vegan vegetable quiche hot or let it cool and serve it cold.
