Chickpeas Recipe Rioja Style

In this recipe we are going to make a typical dish from the north of Spain, specifically from La Rioja. These are the traditional Rioja-style chickpeas, made with chickpeas, chorizo ​​and boiled eggs as main ingredients. This dish is ideal to consume during cold seasons, since it is tasted very hot. Follow the step by step that we offer you and learn how to cook this Spanish recipe.

Ingredients to make Chickpeas Rioja style:

  • 400 grams of cooked Chickpeas
  • 100 grams of Chorizo
  • 150 grams of Tomato
  • 100 grams of long onion
  • 1 unit of pepper or paprika
  • 3 bay leaves
  • 2 sprigs of thyme
  • 3 units of Eggs
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Chickpeas Rejoin style:

1 The first step to make our Rioja-style chickpeas recipe is to pre-list the ingredients.

2 In a deep pot add enough water and add the eggs, bring this pot to medium heat and cook them. Boiled eggs are one of the main ingredients in this traditional Spanish recipe.

3 While the eggs are cooking we are going to make the base of the recipe, which is a sauce made with various vegetables. To do it, take a deep pot over medium heat and add a little sunflower oil, add the tomato, the onion and the red pepper or paprika, all finely chopped.

4 Let it fry for a few minutes and add salt, black pepper and garlic paste to taste; let cook for a few more minutes. If you don’t have garlic paste, you can add the whole garlic cloves to flavor the recipe and be able to remove them when serving.

5 Add the sliced ​​chorizo ​​as shown in the photograph. If you don’t have chorizo ​​you can use sausages, but keep in mind that the traditional recipe uses cured chorizo.

6 Cover with enough water or, if you wish, you can replace the water with chicken broth. Add the cooked chickpeas, leave to conserve for 10-15 minutes over medium heat and lower the heat to a simmer for slower cooking.

7 Add the bay leaf and thyme to taste so that our preparation is aromatic. Let it simmer for another 10 minutes and we will be ready to serve.

8 Serve the Rejoin style chickpeas decorating each plate with the sliced ​​hard-boiled egg. If you wish, you can include potatoes in the recipe and accompany it with white rice.
