Tofu and Vegetable Sandwich Recipe

This tofu sandwich with vegetables is a perfect option for a healthy snack. The truth is that tofu itself does not add much flavor but it does provide the dish with the necessary plant-based proteins and, if we know how to combine it, the result is magnificent. In this case, what we will do is marinate the tofu a little with turmeric and salt to prepare it on the grill.

Apart from tofu, we add roasted eggplant to give the sandwich a creamy touch and pickles to give it a crunchy touch. Go ahead and try this vegan tofu and vegetable sandwich and enjoy a healthy, colorful and delicious meal.

Ingredients to make Tofu and Vegetable Sandwich:

  • 100 grams of Tofu
  • ½ Eggplant
  • 2 lettuce leaves
  • 1 dried tomato
  • ½ Carrot
  • 2 pickles
  • 1 tablespoon vegetable oil
  • ½ teaspoon Turmeric
  • ½ teaspoon of salt
  • 1 vegan bread loaf
  • 1 teaspoon sweet mustard

How to make Tofu and Vegetable Sandwich:

The first thing we must do to prepare this vegan sandwich is to cut the tofu into rectangular sheets. Apart, in a bowl mix a tablespoon of oil with turmeric and salt and stir well. Place the tofu slices inside and cover them well with the marinade. Let marinate 10 minutes.

While the tofu is marinating, we prepare the rest of the vegetables. Laminate the pickles and the aborigine, grate the carrot and cut the dried tomato into small pieces.

Next, heat a frying pan or griddle well and cook the tofu and aborigines on both sides until they brown a little. Cut the bread in half lengthwise. We spread the two parts with a little mustard or any other sauce (vegan mayonnaise, ketchup, etc.) and as an option, you can toast the bread. Remember that to make this sandwich without meat we have decided to use a vegan bread, but if your diet allows it, you can use any type of special bread for sandwiches.

Assemble the tofu and vegetable sandwich by placing the aborigine slices, the lettuce leaves, the tofu, the pickles, the dried tomato on the bottom of the bread and we finish with the grated carrot. Cover the sandwich with the top of the bread and secure with a toothpick to serve.
